New restaurant Blue Goose opening in KB’s Burger Shack spot in Patchogue

KB’s Burger Shack in Patchogue has closed for early September as its new sole owner, restaurateur Brian Kearns, prepares to relaunch as the Blue Goose.

Kearns took full ownership of the West Main Street business on Monday at 10 p.m.

Demolition work is now underway as Kearns gets set to replace the bar, flooring and more.

“When you make a place your own you have to take down the old and put up the new,” said Kearns,  also a lawyer, said of his planned gasto pub.

“I wanted to take comfort food to another level.”

Speaking to the restaurant’s namesake, Kearns allowed GreaterPatchogue to reveal one unique-to-Patchogue item from the planned Blue Goose menu.

The Goose Burger will feature a 10 oz. black Angus beef patty topped with foie Gras (fattened duck liver), smoked blue cheese crumble and sweet onion jam on a toasted brioche bun.

Kearns said he was inspired, in part, by his dining experiences at Henley’s Village Tavern, which features an ever-changing scratch kitchen menu. Henley’s opened in April 2017 in Brightwaters.

“I’ve always been wanting to do something that’s a little more food forward, something like they’re doing at Henley’s Tavern,” said Kearns. “I want to get something going like [Henley’s owner Dan Kitson] has — great, fresh food, farm to table type of stuff.”

The old Burger Shack will be closed for about 2 to 2 1/2 weeks for the renovations.
