Long Island’s third CAVA location for quick and casual Mediterranean food is getting ready for its closeup in East Northport.
CAVA opens Friday, Feb. 20, next to Fat Boy’s Burrito at 4097 Jericho Turnpike, in the former Pet Project location across from Huntington Square Mall, local management has confirmed.
That means the Commack-area foodie faithful — already quite familiar with Greek food — can enjoy salads, gyros and bowls tailored just to their liking.
CAVA, with roots in Rockville, Md., reportedly now has well over 400 restaurants across the U.S. The company operated about 80 when it opened its first Island location in Melville in September 2021.
The lone Nassau location is at 256 Old Country Road in Westbury, with several in Manhattan, Brooklyn and Westchester.
How it works
Diners are invited to build their own bowls or sandwiches starting with a base of greens or grains.
Next, a customer chooses up to three dips and spreads, such as tzatziki, red pepper hummus or roasted eggplant.
Harissa honey chicken, falafel, and spicy lamb meatballs are among the available protein options.
Veggie toppings include bright purple pickled onions, feta cheese and cabbage slaw.
Lastly, patrons pick dressing, such as like yogurt dill or lemon herb tahini.

Some background
According to the CAVA website, the restaurant’s three founding friends,Ted Xenohristos, Ike Grigoropoulos and Dimitri Moshovitis, “grew up with loud Greek families who spent their time gathering around food.”
They then went on the launch their first CAVA in 2006. The company went public in June 2023.
