A familiar space in West Islip is getting a brand-new identity — this time, for the evening crowd.
The former Brownstones Coffee location at 306 Union Blvd. is being transformed into Prospect on Union, a new dinner-focused concept from the same ownership team, Greater Long Island has learned.
The move comes a year after Brownstones relocated down the road to a larger, newly built space at 425A Union Blvd., leaving behind a location that ownership says was too important to give up.
“We know how good that location is,” said Carol D’Angelo Jedlicka, director of operations for Brownstones. “The community really welcomed us there… so we wanted to do something special with it.”
A nighttime counterpart to Brownstones

Rather than another breakfast concept, the team is heading in a different direction.
Prospect on Union will feature New American cuisine, with a full bar and handcrafted cocktails — designed to capture the same energy that made Brownstones a staple, but in a more evening-driven setting.
“We really want it to feel like the same vibe of Brownstones, but at night,” said D’Angelo Jedlicka. “Casual, welcoming… a place for everybody.”
The concept leans heavily into a vintage aesthetic, drawing inspiration from early 20th century Brooklyn.
According to D’Angelo Jedlicka, the restaurant is modeled after Prospect Hall, a historic Brooklyn venue that once served as a theater, silent movie house and jazz club.
Inside, guests can expect a 1920s-inspired atmosphere, complete with silent film-era decor and classic movie posters lining the walls.
“It’s warm and cozy inside,” she said.
What’s on the menu

While the menu is still being finalized, it will center on elevated comfort dishes.
Ownership is especially excited about its appetizer lineup — including sticky ribs — along with a variety of meat and entrée options expected to anchor the menu.
The restaurant will also feature a full bar program, with an emphasis on handcrafted cocktails.
In a nod to its roots, Prospect on Union won’t completely abandon the brunch crowd. The restaurant plans to offer weekend brunch, though with a more elevated approach than traditional Brownstones fare.
Fan favorites may still make appearances — including items like French toast bites — but with a refined spin, said D’Angelo Jedlicka.
The space, which has undergone a full refresh including a new exterior, renovated bathrooms and a rebuilt bar, will seat about 90 guests.
Prospect on Union is expected to launch later this month.
