The developer of Shirley Plaza on the corner of Montauk Highway and William Floyd Parkway is cooking up plans for a Chipotle Mexican Grill.

The developer, represented by Douglas Hynes of Design Development Group in Stony Brook, got the approval from the town’s Planning Board during its April 27 online meeting for a change of use special permit to open a chain restaurant with a dumpster enclosure at the 12.8-acre shopping center at 800 Montauk Highway, which is anchored by Best Market.

The 2,146-square-foot proposed restaurant, which will have 42 seats, is located at the northeast corner of the main 116,000-square-foot building.

A Sonic Drive-In restaurant was approved for the westernmost portion of the property earlier this year, but construction hasn’t started on that project as a result of the coronavirus pandemic.

Brookhaven Councilman Michael Loguercio, whose district includes the shopping center, said the restaurant has the community’s support.

The Chamber of Commerce of Mastics & Shirley submitted a letter of support. No one wrote in opposition to the proposal.

“I think it’s wonderful to bring another business into the area,” Loguercio said. “It’s a business that’s being welcomed by the community and we’re all looking forward to it.”
