Janav Aggarwal was a fan of Bubbakoo’s Burritos. Now, he’s brought the brand to Long Island.
The first location opened in November on East Jericho Turnpike in Huntington Station, marking the fast-growing chain’s debut on the Island.
“I’ve actually been around a lot of these restaurants, even before I knew I was gonna get into this franchise,” Aggarwal said. “Years ago, to eat here. Never even thought about we’d be opening up ourselves one day.”
HOW IT HAPPENED

This is Aggarwal’s first time running his own restaurant, but he’s no stranger to the food business. His family operates multiple franchises, including KFC and Nathan’s, and they decided to take a chance on something fresh.
The team — which includes his uncle Ray Aggarwal, cousin Sophie Aggarwal, and partner Hiren Patel — secured the franchise rights for both Long Island and Queens. Patel already owns a successful Bubbakoo’s in Oxford, Conn.
“There’s none here yet, but there’s around 130 locations around the U.S.,” Aggarwal said. “So, you know, it’s a proven concept.”
Founded in 2008 in Point Pleasant, N.J., Bubbakoo’s Burritos was the brainchild of restaurateurs Paul Altero and Bill Hart. The two wanted to fuse the customizable style of a burrito joint with the bold flavors of American and Mexican street food — all wrapped in a laid-back, Jersey Shore atmosphere.

The Huntington Bubbakoo’s is around 1,600 square feet and has seating for a dozen guests.
Customers can expect made-to-order burritos with protein like steak and shrimp, plus a standout item called the Chiwawa — a deep-fried cheesy rice ball.
Next up: Hicksville. The second Long Island location is currently under construction and set to open next month on Old Country Road, next to Smashburger and Jersey Mike’s.
That spot will be slightly smaller, but the team plans to keep the same fast-casual vibe and menu.
“We’re looking to open at least, maybe upwards of 10” locations on Long Island, said Aggarwal.
