Port Jefferson couple to open Island Empanadas in Stony Brook, Port Jeff, Riverhead

Island Empanada is quickly taking over the island.

On Monday, it was announced a Port Jefferson couple will be opening three Island Empanada locations— one in each of the following Long Island places: Stony Brook, Port Jeff, and Riverhead.

Husband and wife Terrance and Camille Short will be the latest franchisees for the fast-growing company.

“They are really happy to be a part of the Island Empanada franchising family,” said the company’s founder, Roy Pelaez, who has two other franchise locations in Medford and Deer Park.  In addition to the franchised stores, Pelaez owns the original Island Empanada in Ronkonkoma and another in Rocky Point.

The Shorts will open up one empanada eatery at a time. Currently, there are no locations secured, but the two are “aggressively” searching for a storefront, says Pelaez.

“I could see them opening up the first one by the end of this year,” said Pelaez.
