SoBol Babylon opens on Cooper Street in the village

It’s been a lot of work transforming the old Subway in Babylon Village into Long Island’s latest SoBol location.

But the açaí bowl eatery is all set to open on Thursday, Oct. 12, at 21 Cooper Street, the owners have told GreaterBabylon.

“I can’t believe we finally have an opening date!” said Daneen Colombo, who’s opening the franchise location with her friend, Laura Duncan. “I started thinking this day would never get here.”

The women and their families, all from East Patchogue, handled the bureaucratic hurdles and most of the construction work themselves.

“I guess faith, hard work and perseverance really does pay off in the end,” Colombo said.

Formerly called Super Bowls, SoBol is Long Island’s seminal açaí bowl franchise. It started six years ago in Sayville and expanded to Patchogue in 2016 before the launch of a franchise operation last year.

Babylon will be the third SoBol location on the South Shore of Suffolk County, with others already open or in the works in Nassau and elsewhere in Suffolk.

As previously reported, Duncan and Colombo learned about the trending frozen berry bowls through their eldest daughters.

Those daughters, Paige Duncan, 20, and Sam Colombo, 19, both 2015 graduates of Bellport High School, will be part of the management team.

They all bought in for the same reasons.

Those reasons are simple, Duncan says.

“It’s fresh. It’s delicious.”
