Ronkonkoma’s growing Station Yards development just got a whole lot toastier.
Toast Coffee + Kitchen officially opened its newest café on Friday, marking the fifth Long Island location for the beloved brunch brand. The latest spot features a unique vintage train depot theme — a personal nod to owner Terence Scarlatos, who grew up just blocks from the site.
“We’re incredibly grateful and excited to bring our vision of Toast in an old vintage train depot to life at Station Yards,” said Scarlatos. “So it has been an amazing opportunity to be part of this from the ground up!”
Located steps from the Ronkonkoma LIRR station and right by the Village Green courtyard, Toast joins a bustling lineup of eateries in the heart of Station Yards, including VESPA Italian Kitchen & Cocktails, Lucharitos, The Pink Fin, Great South Bay Brewery and Tap Room.
How a West Coast drifter from L.I. built a brunch empire with Toast
Station Yards is a massive mixed-use project being developed by TRITEC Real Estate Company. When completed, it will include 1,450 apartments, 195,000 square feet of retail, 360,000 square feet of office space and a public plaza — all centered around the busiest train station in Suffolk County. The current phase features 388 apartments and 70,000 square feet of retail.
TRITEC calls the arrival of Toast a key milestone in shaping the area into a vibrant new hub for Long Islanders.
“Toast represents exactly what we hoped for at Station Yards: a place that feels personal, rooted and special,” said Jimmy Coughlan, executive vice president at TRITEC. “Terry’s story, the thoughtfulness of the space, and the way the restaurant reflects both local pride and a broader journey — it all adds so much to what we are creating here.”
The ribbon-cutting ceremony drew local business leaders and community members, including Ed McNamara, president of the Ronkonkoma Chamber of Commerce.
“Toast is the kind of place that makes a neighborhood feel complete,” McNamara said. “It’s welcoming, beautifully designed and already buzzing with life.”
Toast serves its signature breakfast, brunch and lunch menu, along with artisan coffee, handcrafted espresso drinks and brunch cocktails — all wrapped in a space designed to evoke the spirit of travel and adventure.
The Ronkonkoma café joins four other distinct Toast locations on Long Island: Steampunk-style in Patchogue, Prohibition-era in Long Beach, farmhouse chic in Port Jefferson Station and carnival-themed in Bay Shore.
