French bakery Mademoiselle Pastisserie announces May 9 opening

Patchogue is now just days away from getting its long-awaited bakery.

Mademoiselle Pastisserie has announced a Wednesday, May 9, opening in the village. And on Tuesday morning the paper was pulled from the windows, allowing passersby to peer inside.

Soon they’ll see owner Michelle Gillette Kelly hard at work in the storefront at 61 North Ocean Avenue, where the baking station is located.

“It’s going to be so nice, especially with the stop sign right there and people can look in while we bake,” she said. “I’m very old-fashioned and I like the old European style.”

The fresh breads, pastries and macarons will be baked daily. Mademoiselle Pastisserie also offers coffee and espresso drinks.

The muffins, cookies and brownies will be gluten free and dairy free, with the rest of the baked goods cooked in the standard fashion.

“And anyone in uniform, whether it’s firefighters, police [or military] they will get a free cup of coffee,” she added. “I feel like that needs to be done.”

The bakery was built in the former all-natural nail salon. It will be closed Mondays and open the other days from 8 a.m. to 6 p.m. and Sundays 8 a.m. to 3 p.m.

Of course, Gillette Kelly and the staff will be arriving much sooner.

She also said 66 people showed up to a recent hiring event.

“I was overwhelmed with how many people have interest in the bakery,” she said.

“And then people just stopped by to say they can’t wait for us to open.”
