Rainbow Scoops ice cream shop coming to Manorville’s King Kullen shopping plaza

After quitting their jobs to become ice cream connoisseurs, Evelyn and Rich Morales debuted Rainbow Rolls in Center Moriches last year on Memorial Day weekend.

Now almost exactly a year later, the couple is expanding their brand to Manorville with their newest ice cream venture, The Rainbow Scoops.

Instead of focusing on rolled ice cream, Evelyn said this shop will offer scoopable ice cream, milkshakes, and the main attraction: cotton candy burritos.

“Instead of opening another Rainbow Rolls, we wanted to expand into our audience,” she said. “We’re big ice cream lovers and we want to give back to the Long Island community and serve everyone…a lot of people do love rolled ice cream, but not everybody is as in love with it and that’s okay.”

Rainbow Scoops at 460 County Road 111 in Manorville (the King Kullen shopping center near the Long Island Expressway) will be a smaller space compared to Rainbow Rolls.

Evelyn Morales said they will have seating and décor that is perfect for posting on social media, including a greenery Instagram wall and neon sign.

The store will offer a little bit of everything including ice cream cakes, ice cream sandwiches and pints-to-go.

Cotton-candy burritos are a specialty item at Rainbow Scoops and a concept Evelyn Morales discovered years ago.

When business slowed over the winter at Rainbow Rolls, she said the thought of this dessert burrito just kept coming back to her, so she and her husband decided they wanted to introduce it to Long Island.

A Rainbow Scoops cotton-candy burrito consists of three scoops of ice cream, three dry toppings, all wrapped in cotton candy and it can be shared between two to three people.

“Once you bite into it, it surprises you so much,” Evelyn Morales said. “You would think it was just way too sweet, but it’s really not — it’s really delicious, everybody has to give it a chance.”

She said opening Rainbow Scoops in this location is a bit of a full-circle moment for her.

When she was younger and living in Hampton Bays, she reflected on stopping by the King Kullen shopping center frequently while traveling to and from New York City with her family.

“It was the place where my dad would stop to get gas, get coffee, and we’d stop to get McDonald’s on the way back,” she said. “So, being a part of that little area just feels like bringing it back home again.”

Evelyn and Rich Morales said they hope to open Rainbow Scoops by Memorial Day weekend, but want to make sure all their “ducks are in a row before opening.”

At the end of the day, they are both ice cream lovers at heart, Evelyn Morales said, and are excited to dive more into the business and community.

“We still go to other ice cream stores and support other ice cream stores that don’t have what we have because we genuinely enjoy ice cream,” she said. “It’s nice to be able to make ice cream and let other people enjoy it, and then us as well going to other places — just the whole full circle of an ice cream community.”
