Montauk Project fills the space formerly occupied by Roberta’s, opens in July

Montauk’s newest dining destination, Montauk Project, is set to open in early July at the former site of Roberta’s on Fort Pond Road.

Owners Bryan Seekamp of East Hampton and Sam Berkson, the former general manager of the iconic and luxurious Goldbar in Manhattan, maintain that the 6,200-square-foot restaurant aims to provide a unique and relaxed atmosphere for locals and tourists, offering live music, innovative dishes and craft cocktails.

“‘Project’ implies that we are not a static entity but an evolving and innovative venture,” Berkson said. “It suggests that we are constantly working on new ideas and experiences, including local artists, musicians, and dishes, creating a vibrant and dynamic atmosphere.”

Seekamp was raised in East Hampton and has deep local roots, growing up in his family’s businesses, Brent’s General Store and the Beach Hut. He later founded a security company serving prestigious clients and has been involved with such prominent nightlife venues at Bootsy Bellows and Grey Lady in New York City.

Montauk Project’s menu will be maintained by chef Jesse Freijo, who has served in the kitchen at Cru Nantucket Oyster Bar and has worked under renowned chef Daniel Boulud. Freijo’s culinary journey began in his father’s restaurant in upstate New York.

The restaurant will feature a curated cocktail menu and a late-night food menu available until the early hours. Dish highlights include Fluke Crudo with avocado and pickled chilies, Bone In Veal Chop with fingerling potatoes and lemon caper pan sauce, Steak Frites with chimichurri, and Whipped Ricotta with rosemary and honey.

Redesigned by Kristin Furman and West Chin of West Chin Architects & Interior Design, the restaurant space features indoor and outdoor dining areas, and blends natural materials like plants, wood, wicker and stone to create an organic and sophisticated atmosphere, the owners said.

Located at 240 Fort Pond Road, Montauk Project will serve dinner seven days a week and be open from 5 p.m.-2 a.m.
