Amanda’s Bakery Co. is now open on West Main Street in Bay Shore

After months of planning, working and waiting — also amid a pandemic — Amanda’s Bakery Co. is finally opening up Tuesday in downtown Bay Shore.

GreaterBayshore wrote back in February that Patchogue native Amanda Dill had decided to open her own bake shop in the former Rolling Pin located at 184 W Main St.

She was supposed to officially open up in March, but COVID-19 happened, and she had to put her plans temporarily on hold.

“I decided to wait and I’m super grateful I did,” the 26-year-old said. “Now is a better time to open, I think.”

Dill said that in March she was finished with updating the bakery with new equipment and décor, had the fire marshal in and was ready to go – but the week of her opening was when the state’s stay-at-home orders began.

Luckily, she said her landlords were “beyond great” and worked with her throughout the pandemic. Together, they decided that the first week in September would be a better fit.

“They have been so helpful,” she said. “I can’t thank them enough.”

So now on Tuesday, Sept. 1, Dill will fill her cases with beautifully decorated treats. She plans on consistently offering cookies, pies, brownies, cakes, cupcakes, cake pops and coffee.

“I’m excited because I know the town’s excited,” she said, adding that people have been showing up near daily to the yellow bakery on the prominent downtown corner, asking if she opened yet.

“It’s going to be really good… I’m looking forward to getting involved.”

Amanda’s Bakery Co. and its “farmhouse motif” will be open Tuesdays through Saturdays, 7 a.m. until 7 p.m., and Sunday’s 7 a.m. to 5 p.m. The baker will be closed Mondays. You can also scope out some of her creations on Facebook and Instagram.
