Hildebrandt’s is stirring up excitement in Williston Park.
The nearly 100-year-old ice cream parlor, famous for its vintage charm and homemade scoops, is about to launch a nighttime twist: boozy shakes and liquor-infused shake shots. The new menu debuts Thursday, Oct. 3, at the Hillside Avenue shop.
“It’s still all about our ice cream, just with some different options now,” Hildebrandt’s manager Katie Assalone told Greater Long Island.
The lineup includes their popular mango ice cream shake blended with tequila, and a chocolate creation mixed with vodka.
The concept was pitched by longtime waitress Eve, who also bartends elsewhere. “She came in one day and told us about her vision,” said Assalone. “We loved the idea.”
For now, the spiked offerings will be limited to shakes and shots, available 8 p.m. to close, Thursday through Monday. A fuller menu of ice cream-and-alcohol pairings is expected later. They also anticipate extending their late-night hours once the new concept takes off.
And to complement the new offerings, Hildebrandt’s will feature a full bar, bringing an entirely new option to the area’s nightlife.
Daytime hours will keep the classic retro vibe that’s made Hildebrandt’s a community staple since 1927.
“We wanted to keep the same luncheonette feel during the day,” Assalone said. “But we noticed there isn’t another bar in town that isn’t an Irish pub, so this is something a little different.”
To complete the nighttime transition, Hildebrandt’s is also installing big-screen TVs for football and UFC fights, creating a sports-bar feel after dark.
“We know our customers are going to be shocked,” Assalone said, “but we think they are going to love it.”
Hildebrandt’s first opened as a soda shop in 1927 and today serves more than 20 flavors of homemade ice cream.
