One of Long Island’s popular empanada eateries is in growth mode.
Island Empanada, founded by Lake Ronkonkoma resident Roy Pelaez, is opening its fourth location in Deer Park next month.
“We have a bunch of leads for some more, too,” said Pelaez. “We’re growing and very happy.”
Pelaez was one of the firsts to open an empanada restaurant in 2011. He later began franchising out his concept in Medford and now Deer Park (he owns the soon-to-be-opened Rocky Point location.)
The new Island Empanada at 1912 Deer Park Avenue, in the former space that housed Lorenzo’s Pizza, will be run by serial entrepreneur Scott Rosenberg.
“He is a really experienced business owner,” Pelaez said of his new franchisee. “He owns other franchises like Nathan’s Hotdogs, Ralph’s Italian Ices, SoBol, and Atomic Wings.”
Now, Rosenberg is excited to branch out to empanadas.
“I see the great potential of owning an Island Empanada franchise and want to be part of this emerging brand,” he said via Facebook.
