Islip favorite Bubba’s Burrito Bar re-opens with larger space, new sit-down bar

After 102 days, Islip’s popular Bubba’s Burrito Bar has finally opened. But, who is counting, anyway?

Perhaps many of their die-hard patrons were, as they packed into the go-to burrito joint on Monday after they got wind of what was supposed to be a quiet soft opening.

“We tried having a ‘soft opening’ yesterday as a trial run to ensure we have all systems working, however, that plan backfired!” Bubba’s Facebook wrote Tuesday morning. “Holy cow, does word travel fast in this town. Thank you to everyone who has been patient through this process. Bubba’s is back!”

Since closing Feb. 28, the owners of the California-style Tex-Mex eatery used the extra space from Anna Re Fine Jewelry—the neighboring business they purchased—to add more seats, phone lines, a larger kitchen space, plus a wrap around bar.

“We did this all for the customer,” said Connie Henriksen, who runs Bubba’s with her husband, Tim. “People used to not be able to get through on the phone and there was nowhere to sit.”

After the transformation, the bustling Main Street business now has upgraded to four phone lines, doubled its number of interior seats to 32, with additional seating at the bar.

At the new bar, Bubba’s is increasing its tap to 16 beers, and they will be “rotating at all times,” says Connie.

“My husband is all about having the best craft and specialty beers,” she said.

The Main Street restaurant also added a new facade, which includes outdoor patio seating.

After running Bubba’s Burrito Bar for 10-plus years, the owners are thrilled for the future in their new space.

“It has been a long process and we’re just so excited to be open,” Connie told GreaterBayShore.
