Islip Hamlet’s popular Tex-Mex eatery Bubba’s Burrito Bar will close for a short period of time while expansion is underway.
As previously reported, the go-to burrito joint in the downtown purchased its neighbor, Anna Re Fine Jewelry, to add more seats, phone lines, kitchen space, and a bar.
“This was a no-brainer as we can take over their storefront and create one bigger, better Bubba’s,” Bubba’s owner Timothy Henriksen told GreaterBayShore.
To complete the extension, Henriksen will be closing his store down starting on Thursday, Feb. 28.
“We are hoping for a quick, smooth transition as we put on the finishing touches to a prolonged, extensive, yet much-needed project!” Bubba’s wrote on Facebook. “We will keep you updated throughout the process as we get closer to reopening.”
When the project is completed, Bubba’s will double its number of interior seats to 32, with an additional 10 seats at the bar.
