Mary Carroll’s Pub has brought the beach to Babylon Village.
Well, at least the white sand, communal picnic tables, and colorful umbrellas for its new outdoor dining area.
“Being safe doesn’t have to be boring,” said Conor Hartnett, the owner of Mary Carroll’s.
That was Hartnett’s thought when his establishment at 121 Deer Park Avenue was gearing up for the relaunch of outdoor dining in Suffolk County on June 10. Mary Carroll’s, along with all dining facilities in New York, has been closed for sit-down service since mid-March due to the global pandemic.
“Honestly, the idea of putting picnic tables on the blacktop in the middle of a New York summer didn’t sound that appealing to me,” said Harnett, with a laugh, as he recalled the origin of this idea.
A day before outdoor dining was allowed on the island, Harnett and his team dropped over 40-yards of sand for his summery beer garden.
The new enclosed area is located behind Mary Carroll’s where eight of its parking spaces used to be.
“The village was very helpful in working with all the restaurants and bars to let them expand their outside footprint,” Harnett told GreaterBabylon.
His beach bar has been a quick hit in the village, drawing people from across the Long Island to have drinks and eats with their toes in the sand.
“It’s been great,” said Harnett. “Everybody has enjoyed it, and we’re excited to get back to work.”
