Pasta pop-up coming to Brownstones Coffee in Sayville, after hours

Brownstones Coffee is getting a new twist this September.

After the breakfast-and-brunch closes for the day, its Sayville location will host Flour and Grain, a fresh pasta pop-up by award-winning Long Island chef Eric LeVine.

The dinners are set for after Brownstones closes on Thursday, Sept. 18, and Friday, Sept. 19, with a possible Saturday added if demand is high. Capacity is about 100 guests on Thursday and 160 on Friday.

On the menu: house-made bucatini, wild mushroom ravioli, cacio e pepe spaghetti, tortelloni, flatbreads, roast chicken with polenta and more.

“It’s authentic, handcrafted pasta,” said LeVine, who also owns 317 Main Street, Vico, and The James Room in Farmingdale. “There’s not many places that have handcrafted pasta in the restaurants. You can tell the difference when you taste it.”

Flour and Grain is taking reservations here. For now, only that week is planned for the pop up, though more could be added depending on community response, LeVine said.

About the chef

LeVine, a Sayville resident, trained at the Culinary Institute of America and worked under celebrity chef David Burke at the River Café before becoming Chef de Cuisine at the Marriott Marquis. He’s cooked at the James Beard House, won “Chopped” on Food Network, and was named Best Chef on Long Island in 2023 and 2024.

After decades in the industry, LeVine says Sayville is the perfect place to debut Flour and Grain.

“When my wife and I go out, we’re always looking for a great pasta spot,” he said. “This is going to be simple, creative, flavorful and fun.”
