PopUp Bagels scouting spots for 2nd permanent Long Island store

After a hugely successful entrance into Nassau County, the growing bagel sensation known as PopUp Bagels is looking for a second Long Island spot.

The company is currently scouting locations with a plan to open by the third or fourth quarter of 2025, a PopUP Bagels rep told Greater Long Island. Check back for the exact location when it’s announced.

The viral bagel sensation was founded in a Connecticut home during the pandemic, then began opening brick-and-mortar locations across NYC and New England.

Its foray onto Long Island last month created quite the stir at the store itself, and on social media. (See below.) The local PopUp Bagels location opened Nov. 8 at 1388 Old Northern Blvd. in Roslyn, right in the heart of Long Island bagel country.

“We knew the Roslyn community was excited about our opening, but we were truly amazed by just how enthusiastic they turned out to be,” the company’s founder, Adam Goldberg, told GLI. “Long Islanders are known for their high standards when it comes to bagels — and with so many bagel shops in the area, we didn’t take their warm welcome for granted.

“Our grand opening was nothing short of unforgettable, and the continued support from this community is something we hope to see replicated in every location moving forward.”

In addition to the new spot, PopUp Bagels will continue to operate its summer store in Amagansett. That shop operates from Memorial Day through Labor Day, and will be even bigger for 2025.

“As demand progresses [in Amagansett], we plan to introduce greater walk-up availability and special events,” the representative told us. “Demand for our bagels has been incredible, often selling out within minutes, so we’re working on increasing our capacity and availability for the coming summer.”

The concept founded by Goldberg — who was making bagels and selling them out of his home during COVID — has rapidly attracted hordes of investors, including the prolific actor Paul Rudd.

Goldberg has since stepped down as CEO and serves as the company’s Chief Brand Officer, according to a company spokesperson.

The bagels are known for crispy crusts, soft centers, perfect size and ideal seed proportions. PopUp Bagels also introduces new dips and spreads regularly, including this week’s Spicy Vodka Schmear, which is currently going viral among food enthusiasts.

The company states often that Goldberg’s idea was to make the “perfect bagels with no frills, just the essence of simplicity.”

PopUp Bagels also took top honors in Brooklyn’s BagelFest Best Bagel award two years in a row.

How it works

Don’t expect to grab a sandwich or bacon, egg and cheese at PopUp Bagels.

The bagels are served hot and whole. Purchasers then rip them and dip them into select cream cheese options.
