A takeout Tex-Mex place that specializes in fajitas is in the works for West Main Street in East Islip.
Ole’s Fajitas is taking over a former 940 square-foot-space vacant yoga studio for its strictly to-go grill — there are no seats and they only offer takeout or delivery.
“As with the ever-changing world right now in COVID, takeout seems to be a preferable way to get food for families,” said Amy DeVito, a representative of the business.
During an Islip Town planning board meeting held over Zoom last month, the representative and owner proposed a menu that combines “culinary creativity, modern kitchen technology, and fresh high-quality ingredients to deliver the delectable fajitas with mouth-punching flavor and sizzle.”
Customers can expect a variety of soups, salads, tacos, burritos, quesadillas, and more items on the menu as well.
The Planning Board unanimously approved the restaurant at 15-39 West Main Street on Feb. 24.
Ole’s Fajitas plans to be open seven days a week, 11 a.m. to 9 p.m.
