Island To Table: Satur Farms is a combination of agriculture and culinary arts

CC PE in Grass JPEGTucked away on Long Island’s verdant North Fork, Satur Farms is reaping the leafy-green rewards of a summer growing season.

But if you can’t make it out East, the 250-acre farm’s rare herbs and flavorful baby greens will be garnishing the plates of the outdoor dining experience, Island to Table, this Sunday, July 31.

Owners Paulette Satur and her husband, Eberhard Müller, have combined their knowledge of sustainable agriculture and culinary arts to produce the finest flavor profiles available, they say.

Satur grew up on her family’s farm in Pennsylvania and spent 12 successful years in the New York City wine business before bringing her love of farming to Long Island. Müller spent 30 years as a renowned professional chef before the couple purchased the farm; now he works full-time growing and supplying chefs with produce that meets his professionally developed standards.

“Everything that we grow here has incredible flavor and aroma,” Satur said. “We’re proud to be growing on Long Island because of the flavor profiles that we can harvest. We grow in Florida in the winter and quite frankly, we prefer the flavors that the sun and the sandy loam soil on Long Island produce. The wild arugula is wonderfully peppery, and the cilantro has a brilliant flavor, not soapy like you sometimes get from other soils.”

Satur Farms’ vibrant baby kale, flavorful herbs, and crisp cilantro will all be featured at the six-course Island to Table, at which five chefs from the Greater Patchogue area will be preparing dishes using Long Island-sourced ingredients.

“We’re looking forward to raising awareness of the many farms and fresh produce that is available right here on Long Island,” Satur said.

“Even a lot of Long Islanders don’t know there are so many different options!”

Satur Farms is open to the public once a year in conjunction with The North Fork Foodie Tour, which will be held this year on Sept 11.
