Merrick’s newest burger joint has arrived.
Betty’s Burgers & Ice Cream Bar opened its doors Tuesday, bringing double-stacked smashburgers, creative toppings and some seriously over-the-top desserts to 1960 Bayberry Ave.
“We are very excited to be a part of this community,” co-owner John Breeze told Greater Long Island. “We hope to serve everyone the right way and everyone loves our food.”
The burgers are the main event, made with Betty’s proprietary beef blend and served double-stacked. For those who are really hungry, any burger can be upgraded to a triple.
And the menu goes well beyond the basic cheeseburger.
The Garlic Pesto Smash comes topped with melted mozzarella, caramelized onions, arugula, tomatoes and garlic pesto aioli, while the Carolina Stack piles on pork rib tips, cheddar, coleslaw, bacon jam and Carolina Gold sauce.
Then there’s the Nacho Pepper Hot Stepper, loaded with nacho cheese sauce, onions, peppers and jalapeños.

“My chef John Shevlin came up with all these burger ideas,” Breeze said. “The Cantina Burger with roasted jalapeños, avocado, Queso Oaxaca, street corn aioli and Chipotle Mayo may be my favorite. It’s so good.”
For those looking to skip the meat, Betty’s also offers a Laguna Veggie Burger.
The menu rounds out with salads, hot dogs and sandwiches, including a Philly cheesesteak, Betty’s McRib and the Betty Bee Sting, crispy fried chicken topped with hot honey and pickles.
But if the burgers are the main attraction, the desserts might just steal the show.
Betty’s features eight giant specialty sundaes, including the Candy Craze, made with vanilla ice cream, marshmallow sauce, strawberry drizzle, Fruity Pebbles, M&M’s, gummy bears and whipped cream.
The Cookies and Dreams combines cookies-and-cream ice cream with hot fudge, whipped cream, caramel drizzle, chocolate chips and crumbled Oreos.
Customers can also build their own sundae with more than a dozen toppings, while the shake menu includes flavors such as Cookies and Cream and Fluffernutter.
Despite the over-the-top food, Betty’s is designed to have a relaxed, laid-back atmosphere where customers can grab a burger, hang out at the bar and have a drink.
“Betty is another name for a female surfer, and that makes me think of a chill, surfer vibe,” Breeze previously told Greater Long Island.
Betty’s is open from 5 p.m. Tuesday through Friday and noon on Saturdays and Sundays, with plans to stay open until at least 11 p.m. The restaurant is closed Mondays.
