Photos from Hunter & Thief, now open in downtown Lindenhurst

It took nearly four years, but Hunter and Thief has finally opened its doors in Lindenhurst.

During that four years, the husband-and-wife ownership team of Gabrielle and Jonathan Gonzalez initially faced some building delays, par for the course for most renovation projects.

But then came the COVID shutdowns, a broken window, and in May 2023, just before they were getting set to announce a grand opening, a car smashed directly into the building at 21 West Hoffman Ave.

Jonathan, a three-time best cocktail winner at the NY Cocktail Expo, has been a mixologist for nearly 20 years. During his career, he’s been a beverage director/bar manager in places such as Blackbird Kitchen & Cocktails in Wantagh and South Shore Dive in Sayville.

Now he’s coupling his experiences with his own creative influences.

The look of Hunter & Thief features elements reminiscent of Teddy Roosevelt’s house at Sagamore Hill, the Lyan company in the U.K., Brooklyn Star, Milk and Honey NYC, and more, Gabrielle said.

As for the food, “everything here is as fresh as we can get it,” Jonathan said.

“We sourced lavender for our syrup from Lavender by the Bay [in East Marion], and the peaches are hand-picked by our staff from a local peach farm out East,” Gabrielle added.
