Island Empanada coming to Lindenhurst next month

Long Island’s popular Island Empanada franchise operation is expanding into Lindenhurst this summer, adding to its existing eight locations across the island.

Franchisees Peter and Kerry Muino of Holbrook will run the latest Island Empanada shop at 646 North Wellwood Ave.

“It’s a great town, my wife and I, when we first got married we lived in Lindenhurst for eight years,” he said. “It was the closest territory available to our house that we thought truly had the best potential.”

For 23 years, Peter Muino made a living as a FedEx ground contractor, running a fleet of 18 trucks on Long Island. Kerry has been working at the Courtyard by Marriott near MacArthur Airport.

The couple ditched their longtime jobs to get into the food business, and this summer they will be co-owners of two different food franchise stores.

The Muinos opened the first-ever Emack & Bolio’s Ice Cream location in Manorville this month and they are looking to launch Island Empanada in Lindenhurst by June 15.

Muino said the downtown revitalization of Lindenhurst and other new businesses joining the area is what drew them to the location.

Island Empanada Lindenhurst will remain consistent with the franchise’s brand — the 2,000-square-foot storefront’s look is the same as the other Long Island locations.

Muino says they recently received the green light to begin construction — he and his wife can’t wait to “knock it out of the park.”

“I know working for myself, I know so many good things are going to come out of operating in Lindenhurst,” Muino said. “It’s really a great town and it’s an exciting time for us.”
