Great Dishes: El Pilón is serving up classic mofongo in Bay Shore

It’s all about the mofongo at Bay Shore’s newest Latin American eatery, El Pilón.

And serving up mouth-watering mofongo is important to the restaurant’s owner, Jose Colon, who grew up in Puerto Rico eating the dish.

“It’s important to have the freshest ingredients,” said Colon, who opened El Pilón last fall at 275 West Main Street.

To honor his childhood favorite dish, Colon’s chefs serve up his mofongo classic-style by creating the base with smashed fried green plantains, then adding chopped garlic and chicharrón (fried pork rind), and topped with a choice of meat: skirt steak, shrimp, or chicken.

Colon’s many years of noshing on mofongo have led to the success of the plate at his restaurant.

“It’s an easy dish to prep, but you have to know how to make it — it’s the little things,” explained Colon.
