Five top chefs from across Greater Patchogue will be participating in the July 31 Island to Table outdoor dining experience in Patchogue Village.

The chefs will only be using food from the land or waters of Long Island for the fundraiser, which is being held at the New Village at Patchogue complex.

Appetizer: Summer Tomato and Grilled Corn Crostini with Whipped Catapano Goat Cheese

“In food pairings I’ve always stressed: what grows together, goes together. We are lucky to have such beautiful farms and markets that offer the best of what’s available. Catapano goat cheese is made right here on our East End and lends it’s earthy notes really well with the sweetness of the Long Island corn and summer ripe tomatoes. Drizzling a basil infused olive oil on top will complement the freshness of this summer harvest. 

Dessert: Lemon Ricotta Cake with Honey Mascarpone Cream and Fresh Local Blueberries

“The fresh ricotta in this cake makes it totally moist and the perfect consistency, while the lemon accent creates a refreshing end to the summer meal. To me, Italian food is comfort food foremost, but at the same time has a subtle sophistication to it. It’s quite effortless, the way the most simple ingredients turn into a mouthwatering meal. 

“The mascarpone, besides making the cream that much more delicious, also gives it more structure to hold up in the July heat. I’m definitely working against the mid-summer heat wave with this dish.”
