Hip. Modern. Authentic.
It’s that last part that Eduardo Matute is really looking to emphasize with his Mamey Mexican Taqueria.
The Babylon restaurant is planned for for 122 North Carll Avenue, just a few hundred feet north of the train tracks in the former Babylon Crepe & Pita Grill space.
Matute, along with his father — who brings about 25 years of NYC cooking experience to the table — is looking to serve the type of tacos, burritos and quesadillas you’d actually find in Mexico.
They believe their spot near the LIRR station is perfect for grab-and-go.
“We’re going to stay away from the American, Tex-Mex style,” said Matute, whose application went to public hearing Tuesday night before the Babylon Village Board. No one from the public spoke at the hearing.
“We’re actually aiming for June to open, since [the space] is already an eatery,” said Matute, who lives in Islip and is a 2007 graduate of Bay Shore High School.
As for the name Mamey, that’s a fruit native to Central America that Matute described as sweet and creamy.
“It’s used in ice cream and desserts, but it’s catchy,” he said.

Despite its emphasis on takeout, Mamey Mexican Taqueria will have room enough for three tables of four, and diners will be treated to customized guacamole made on the spot.
“It will be very modernized, Mexican takeout,” Matute said of the design plans.
“It will have that Spanish touch in an American environment.”
Babylon Village’s recently enacted 1-year moratorium on new restaurants doesn’t apply to Mamey, since it’s taking up space in what was already an existing eatery.
