Port Jefferson Station has a new grab-and-go eatery in town—and it is all about the cheese.
Cheezly’s, a build-your-own mac and cheese and grilled cheese restaurant, opened in what can best be described as a suped-up food truck at 403 Patchogue Road, behind the Carvel on Route 112.
After 2,000-plus miles and 29 hours of driving to and from Georiga, longtime friends Cody Kilroy and James Christiano brought back a 24-foot food trailer for their venture. The trailer features an enclosed deck, and will soon include seats, heating, and air-conditioning. There is outdoor seating around the trailer, too.
On Sunday, the two Mount Sinai High School graduates celebrated their launch.
“The grand opening was really great,” said Kilroy. “It ended up being a lot busier than we originally anticipated.”
The founders use a Chipotle-style ordering system.
There are four steps.
First, pick your entree of either mac and cheese or grilled cheese sandwiches. Then your protein — bacon, chicken (grilled or crispy), short rib, or pulled pork.
Step 3 involves your choice of unlimited toppings — from vegetables to crushed up Doritos. And, finally, there is an array of sauces to choose from.
All of the cheeses are melted in-house, according to the owners.

Cheezly’s will be open Monday through Thursday from 10 a.m. to 10 p.m., Fridays and Saturdays from 10 a.m. to midnight, and Sundays noon to 8 p.m.
