West Islip’s first brewery is nearing completion on Union Boulevard.
GreaterBayShore broke the news last year that West Islip native Ken Srubinski, 29, was opening up Secatogue Brewing Company in his hometown. He recruited his family — including his wife and West Islip High School sweetheart — for the project.
“I feel like this town has been looking for something like this,” said Srubinski. “There are a lot of doctors offices, actually this was going to be one, too.”
After predicting a summer launch, Srubinski is now eyeing a late November opening.
“Now it feels like real,” Srubinski said Tuesday. “Next week we are brewing our first beer.”
Srubinski, who is also the head brewer, will be producing a wide variety of brews, from light and hoppy, to dark beers.
He says his Pink Hibiscus IPA has been a fan favorite so far.
“Beer is growing rapidly on Long Island and we are carving out our own spot,” he said.
The brewery is 4,300 square feet and could hold about 100 people, according to Srubinski.
In addition to the tasting area, there will also be a separate room for private parties.
“We’ve been getting nothing but positive feedback,” he said. “I can’t wait to open.”
