There aren’t many voids left when it comes to the variety of different restaurants and bars available to people in Babylon Village.
But a place to sit down and enjoy a make-your-own gourmet burger paired with homemade french fries is one of them, says Richard Bedrosian, the co-owner of the soon-to-be Babylon Burger Bar at 1 West Main Street.
“A burger bar is a place where you have the greatest hamburger in the world … you got to have fresh-cut french fries, and you got to have great milkshakes,” said the Dix Hills resident.
The restaurant, planned in the prominent space last occupied by One West Main, is also across from the future Argyle Theatre performing arts center. So the Babylon Burger Bar will be keeping its doors open until 1 a.m. to cater to those attending late shows.
“When they walk out of the doors, we are going to be the first spot they see,” said Bedrosian.
Bedrosian, who is launching the burger venture with partner Roy Feicco, said the men have been trying to find a spot in Babylon for about three years now.
“For me, there are three great towns [on Long Island] in Rockville Centre, Huntington, and Babylon. They seem to be the go-to places for foodies,” said Bedrosian.
Now that they’re finally in the village, they want to bring an approach to burgers they learned about in Las Vegas.
“There is great place called the Burger Bar that had great, build-your-own gourmet burgers,” explained Bedrosian.
They’ll be bringing their own rendition to Babylon, with a menu where you can pick from many different meats, buns, and toppings — and where everything is made fresh and to order.
“Our burgers take 14 to 16 minutes to cook,” said Bedrosian.
Babylon Burger Bar will also have some offerings not readily available on Long Island, such as the Montreal-style poutine fries, which are covered with cheese curds and gravy.
“Years ago you used to go to the diner and call them disco fries,” said a chuckling Bedrosian.
And there will be a big emphasis on milkshakes, especially the Supershakes.
“It’s a milkshake, but it is topped with a desert,” said Feicco, describing one Supershake that’s topped with cannoli.
There will also be a bar with a tap line of 16 craft beers that will include local offerings.
“There are so many great breweries on Long Island and we want to feature four or five of them,” said Bedrosian.
