Island to Table: Mushrooms from Open Minded Organics in Bridgehampton

The Open Minded Organics farm stand on Butter Lane in Bridgehampton is a one-stop shop for fresh, naturally grown produce.

You can find everything from hot peppers to fingerling potatoes to mushrooms grown fresh on owner and operator David Falkowski’s farm.

A Bridgehampton native, Falkowski started growing mushrooms in 2003 after earning his mushroom cultivation certification from renowned American mycologist Paul Stamets in Washington.

Today, he cultivates a wide variety on his farm, including blue, white, and yellow oyster mushrooms, as well as shiitake.

The high-quality mushrooms are highly sought after by top restaurants and celebrity chefs. Falkowski’s oyster mushrooms were featured in an episode of the Barefoot Contessa and praised by famous Hamptons foodie Ina Garten.

The prized ‘shrooms will be served at the Island to Table event on Sunday, July 30, in Patchogue.




For instance, Chef Terri Novak will be using Open Minded Organic’s oyster and shiitake mushrooms in her wild lion’s mane mushroom ragu appetizer.

The oyster mushroom is known for its mild sweetness and woodsy flavor, a culinary go-to for stir-fries and soups. Fresh shiitake mushrooms have a unique, buttery richness. Their water content is much lower than the average mushroom, lending them a firmer texture and more intense flavor.

The Open Minded Organics farm stand is open Monday through Thursday, 9am to 5pm, Fridays and Saturdays 9am to 6pm, and Sunday 10am to 5pm.
