Culpers 1778, a new high-end steakhouse inspired by Long Island’s Revolutionary War heritage, officially opens in East Setauket this Tuesday, June 17.
The ownership team — Scott Brittman, Chris Otero, and Ed Fabian — shared the news this week on social media, encouraging prospective diners to book reservations ahead of time. The restaurant will open with initial seating for 70 to 80 guests, and the team expects a strong early turnout.
“We expect a big turnout,” the post read. “Highly recommend making reservations.”
The steakhouse has taken over the space in Old Schoolhouse Square formerly occupied by Mario’s Italian Restaurant at 212 Main St. The partners — each boast local restaurant experience — have spent the spring transforming the venue with new finishes, including a revamped bar, updated lighting and ceilings, and an overall freshened-up aesthetic designed to match the upscale atmosphere.
The upscale atmosphere will be bolstered by white-tablecloths, while subtle historical elements —like a 13-colony flag and Revolutionary War imagery — will give a nod to the region’s past.
Paying homage to area’s rich history

The name “Culpers 1778” references the Culper Spy Ring, a network of covert operatives organized by George Washington that operated throughout Setauket and surrounding areas during the American Revolution. The ring played a key role in gathering intelligence from British-occupied New York City and passing it through Long Island.
The restaurant’s menu will center on premium cuts of beef, including American Wagyu ribeye and several steaks for two, such as a tomahawk and a porterhouse. While the restaurant will eventually seat about 200 guests and include bar seating for 15 to 20 people, the team is starting smaller as they ramp up operations.

“Opening a steakhouse has kind of been something that me and Chris have wanted to do for a while,” said Brittman, a Setauket native and Ward Melville High School graduate. “There’s not really much else around here that is a higher-end steakhouse.”
Culpers 1778 adds to a growing roster of restaurant projects connected to the trio. Brittman and Otero also co-own The Whiskey Barrel in Port Jefferson, while Fabian is a partner in Billie’s, also in Port Jefferson, and is preparing to launch the Artemis speakeasy in Ronkonkoma’s Station Yards.
