Smithtown has a new elegant dining option.
The Chas. opens Tuesday, March 10, inside the former Carrabba’s Italian Grill space along Route 347, replacing the casual chain restaurant with a more contemporary concept geared toward dinner service and nightlife.
“It’s sexy inside, dark, and it really lights up beautifully at night,” said Christina Sbarro, the group’s director of marketing. “It feels classy but really hip. It’s going to be great for all age groups.”

The steaks are the headliners — USDA Prime cuts, dry-aged for 38 days — but the menu features much more. There’s a raw bar and caviar service. Handcrafted sushi rolls. Baby back ribs. Buttermilk fried chicken. Peking duck bao buns. Wagyu pigs in a blanket.
“We kept the excellence people expect from Rothmann’s but added modern dishes we’re really excited about,” Sbarro said.
The name carries its own legacy. The Chas. honors Charles Rothmann, one of the original founders of Rothmann’s, whose nickname was “Chas.” A prominent portrait inside shows him with his signature Old Fashioned — a wink to the past inside a space built for now.
Inside, there are semi-private dining sections, a large party room and a sleek lounge space with sliding doors — the kind of spot made for birthdays, deals and celebrations that stretch late into the night.
“The restaurant is huge,” Sbarro said. “It’s perfect for events, celebrations — even weddings.”
