yērōs – authentically Greek

Gyro is spelled yērō in Greek, and its meaning is simple: round.
These gryos are true to their name: they’re round and stuffed carefully with meat carved in a circular pattern from the spit. That tight shape helps pack all the flavors into each bite, and they don’t fall apart. Theirs are made more traditionally, with tomato (no lettuce), onion, tzatziki and fries.
